Admittedly, my favorite vegetable during this season is the sweet potato. I’ve said it a million times before, and it will be a statement that remains on repeat. They are usually my favorite tuber to play with during the fall. That being said, there’s no sweet potatoes in this recipe. It’s time to switch it up, right? Today, I am sharing a simple recipe featuring my second favorite orange vegetable–carrots. They’re sweet, crunchy and versatile. And best of all, they’re pretty. Especially if you explore all of the colors.

Leaning into Summer

Malibu Wines - The Duo Dishes

Last weekend, I celebrated a friend’s birthday at Malibu Wines Tasting Room. A dozen friends and I ventured to the Santa Monica Mountains, where we sipped vino under the bright sun and toasted to the coming summer. Of course, as well, we ate! Each person brought an array light nipplets to share with the group. We passed around thin slices of mortadella, stuffed gourmet olives, and strawberries dipped in goat cheese among other things. Of course, I had to bring something too. My contribution to our afternoon, birthday picnic would be an oversized crostini featuring smoked salmon and avocado. Continue reading “Leaning into Summer”

Take Us to the Greek

One of the best parts of summer is finding ways to eat in a lighter fashion. Don’t get the wrong idea. You will still see lots of desserts popping up this summer and maybe a few more cocktails, but don’t think that’s all we eat. We like our protein and veggies as much as the next person, and we both find ways to create balanced meals for the majority of our eating. If you have a hard time squeezing in healthy servings of the food pyramid, try wrapping them in flakey, crispy dough. Maybe phyllo dough if you’re feeling frisky. It’s light and airy and provides just the crunch you need when paired with fresh salmon, spinach and feta cheese.

Salmon & Curry Sauce and Roasted Beets-Duo Dishes

It is not hard to be a foodie. We live it, and we love it.  But there can be downfalls–pits and traps that make it hard along the way.  They come in the form of baked goods, fried food, creamy dips and bacon-wrapped anything.   Our lovely Diva at Beach Eats summed it up best in Fact Two of her special report on the life of a food blogger.    It can be a struggle.  A struggle for real!  We like to cook and eat and share our cooking with friends, so they can eat it too.   Sometimes we may be doing everyone a slight disservice, although no one wants to admit that.  Well we will today, here on this blog!  That being said, we had to take a break from the desserts, treats and snacks that we do love to make from time to time (back away from the butter!) and showcase a full meal packed with protein, fiber, beta-carotenes and healthy fats.  Yes, there is such a thing as healthy fats.  At least that makes us feel better about leaving our butter behind.
