If any of you follow us on Twitter, then perhaps you know that half of this Duo is a temporary vegan. That’s right. A temporary vegan. The change is not for philosophical reasons, though there are many important issues there to always keep in mind. And they should all be kept in mind through smart purchases of certain food items. This temporary change began at the top of 2011–a New Year eating adventure that tests any dairy and meat-eating foodie and cook. Of course, eating vegan does not mean that you are limited to only beans, vegetables and quinoa. There are many, many other amazing and varied meals and snacks to eat. The trouble is finding them, especially when you are a newbie. Good thing being adventurous with eating and cooking is a character trait that rules our respective kitchens.

It’s Just the Little Things

We know you have a signature dish that makes everybody go crazy. Or you make something following the usual recipe, and the one day you do something different–add your own touch, if you will–people are asking what you did that time around. There are so many ways to give food your own zap. We all do it. That’s why only Grandma So-and-So can make the potato salad at the family reunion picnic.

At Thanksgiving, no one takes the yams from Uncle Whoever. He’s the only one that makes them just right. If you want to avoid the wrath of greedy family members, please don’t give the Easter ham to anybody except Cousin What’s-Her-Name. Only she knows what she’s doing. You know what we’re talking about.

Well, that’s their secret to the grave.  You’ll probably never find out, and maybe that’s OK.  If we had the in’s and out’s of everyone’s recipes, they wouldn’t be unique anymore.  Maybe the best part of eating that signature dish is knowing that you’ll never have a clue what’s in it.  The mystery makes each bite so good.

We test drove some cookies, making a couple of interesting decisions along the way.  A little of this, a bit of that.  Making sure to incorporate distinct and noteworthy aspects to each recipe.  We’re still experimenting, but we think we’re onto something.  Don’t hate us for being vague. We just wanted to show you a few of the things we’ve been working on for a special project, but we do have to keep our DD touch secret for now! And we won’t hate it if you do the same.

What speaks better to home cookin’ than an apple pie.  Hot, sweet and delicious, it is in the top ten list of favorite desserts.  Just after the New Year, our good college friend Joey at Biddy’s Biz hosted a dinner at his own apartment.  In addition to a menu of goat cheese and strawberries over greens and roast brisket, he baked an apple pie.  Lattice crust and all!  Through the magical combination of today’s cutting edge cellular technology and social networking sites, he shared the image of his freshly baked pie with the Facebook world as an homage to his apple cutting and pastry slicing skills.  That’s why we asked Joey to send this right on over for our Guest Test Kitchen and give you the lowdown on his delightfully delicious apple pie.

Third Time’s a Charm

Sweet Potato Apple Cotija Quesadilla

Maybe you’re tired of cotija cheese popping up around these parts. We’re sorry. We really are. But it’s just so good, we keep pairing it with everything. Maybe three times in just over a month is too much, but you can’t fault us for working with what the good Lord gave us. And He gave us cotija cheese.  That’s why we keep playing with other ingredients that really complement its flavor. A little knowledge for you: Did you know there are two types of cotija? The first is the grain cheese that crumbles upon cutting due to higher salt content and softer texture. The second is the tajo cheese that maintains its shape upon cutting due to lower salt content and higher fat content. Here in Southern California, Cacique seems to be the best brand of U.S. produced cotija cheese, so that’s what we’ve been using as of late. But enough of that, it’s quesadilla time!
