Cheaters Sometimes Win

Seafood and Eggplant Fettucine-Duo Dishes

There’s something about eggplants that make them super tasty.  Not sure what it is, but they’re good.  The fact that they are so versatile, it’s easy to work them into a variety of dishes.  Carb cravings came on strong, and it was time to have a little pasta.  Pasta and eggplants!  Now, sometimes you have to cut corners to make things happen.  Perhaps you shouldn’t do it if you’re running a marathon or taking the SAT, but we’re talking about cooking here.  There are no ingredient police hanging out in our ‘hood, so it’s OK to cheat when necessary.  It seems like whenever we want to do something good and fast, our friend Joe (yes, the one who is a Trader) always hooks it up!  We had this really great jar of eggplant spread that hadn’t been opened, and it seemed like the next best thing to a fresh eggplant.

Sergio’s Test Kitchen

Sergio cooks-Duo Dishes

We have great friends who like to cook as we do. More and more, our amigos are sending us Facebook and Gchat messages about what they just made.  If we’re lucky, we’ll get a text with a photo.  As foodies, we are easily excited by meals that we make ourselves, but it’s nice to see our friends beaming with pride over their dishes.  Sergio is a good friend of ours who lives far across the world in Harlem, New York.  He’s made several trips out to LA, and believe it or not, during those visits, we’ve never cooked for him nor he for us.  We do know that he likes to throw parties for friends and invite them over for holiday dinners every once in a while, so clearly he must know what he’s doing.  He was delighted to receive an invitation to be the August guest for our Test Kitchen series.  Let’s see what he’s cookin’, shall we?

A Beautiful Disaster

German Chocolate Cake Cookies-Duo Dishes

There are many ways to replicate a favorite food or drink in the form of a cookie.  Cakes, pies and even cocktails are popular starting points.  We’ve already done carrot cake cookies, which are very popular.  We have a few more on the list we’d like to try like apple pie, strawberry shortcake, lemon meringue and pecan pie too.  We decided to start with german chocolate cake.  We found a recipe that seemed like it’d work just perfectly with a few tweaks, and so we got to work adapting a new version.  Into the oven went lovely mounds of chocolate batter, but what came out wasn’t exactly what we expected to see or taste.

A Little Sweet and Savory

Maple Cardamom Pork & Pepper and Mushroom Pilaf-Duo Dishes

There are two flavors in combination that really get us going, and that’s sweet and savory.  Remember that goat cheese tart from a while back?  Oh yes, the smooth, creamy, rich, sweet and savory goat cheese tart that is at the top of our list for favorite desserts.  It is one of our best examples of the way these two culinary qualities know how to play well together.  We are making an earnest attempt to balance our sweet tooth (and a penchant to bake) with complete meals that include a taste of everything we love along with nutritious characteristics.  We’re featuring a white meat for this dish–the other white meat.  Pork.  These two little piggies went to market and enjoyed the ride.

Taking Full Advantage

Honey Roasted Corn and Black Bean Salad-Duo Dishes

There are many states across this nation that can pride themselves in great produce.  Georgia has its peaches, Florida has its oranges, Washington has apples, Iowa owns corn and so on.  Without a doubt, California’s share of the corn production pales in comparison to Iowa, Illinois, Nebraska Minneasota, etc., but the pickings are still good.  Corn is one of our favorite summer staples.  So far this summer, we’ve eaten a good amount, sharing with you our grilled version and even a nice purée.   The prime months are June and July, but the stock of produce will continue to flourish into October, so we know there are several more weeks of good eats in store.  With a fresh salad in mind, we grabbed a few more ears and got ready to enjoy.
