Foodbuzz 24, 24, 24: Creativitea on the Grill

We’re a tad frazzled with this month’s 24, 24, 24, but we hope our vision comes together for you in the end!  When Foodbuzz sent out a call for entries, we submitted our proposal just a couple of hours later.  The idea was buzzing in our heads, and we knew it’d be so fun to complete.  Unfortunately, we weren’t chosen.  Boo.  But one week later, we received word of a last minute cancellation, which meant there was room for us to squeeze in.  Yay!  We really love hosting these types of events for our friends, so needless to say, this was a great way to roll into the upcoming weekend.  And then it hit us!  We had a lot of planning to do–planning that we clearly had not been prepared to do.  So we went back to square one and started to re-brainstorm from where we’d left off following the proposal.  From there, it was nothing but a blast!

Bacon Makes It Better

Apple and Bacon Puffs-Duo Dishes

We like bacon, we really do.  Those thick strips of pig know how to jazz up a dish, don’t they?  It’s the summer, and all we can smell on the streets of Los Angeles are bacon wrapped this and bacon wrapped that.  Specifically, we’re referencing the street vendors we adore who shell out bacon wrapped hot dogs. Yeah, they’re the best!  But we digress…when we think of bacon, we think of smokey, hickory, grill-y flavor.  It’s the olfactory essence of its character that makes bacon stand out.  We wanted to make a mini grilled dessert treat using bacon, so we racked our feeble brains to see what was still floating around in there.  You know, there are always recipes that you see out there on this wide ‘net and vow to make.  Well, we were drawing a blank, so we had to come up with something.  These two bite sweet meal enders were the ticket.

There’s a Plan for This

Round 1: Maple Cinnamon Wheat Bread that is neither mapley, nor cinnamony.

This bread actually came about because there were a couple of other recipes for which we had a hankering.  We thought to ourselves, “Selves, a sweet breakfast and a hearty sandwich would be perfect if we had a good X.”  So we had to deal with X, which was a soft loaf of wheat bread.  We’d only tackled one yeast-risen bread loaf so far to date, so it was surely time to give it another try.  After doing more research on bread baking techniques and tricks, we drafted a recipe that seemed like a good one.  We had everything on hand to make this, so writing the initial recipe came easily.  Unlike the first loaves of bread we made, this one involved tricep-trimming kneading action that we had previously been lucky enough to avoid.  After two rounds of rising, into the oven it went!   But what came out was not quite what we expected.

It’s Just the Little Things

We know you have a signature dish that makes everybody go crazy. Or you make something following the usual recipe, and the one day you do something different–add your own touch, if you will–people are asking what you did that time around. There are so many ways to give food your own zap. We all do it. That’s why only Grandma So-and-So can make the potato salad at the family reunion picnic.

At Thanksgiving, no one takes the yams from Uncle Whoever. He’s the only one that makes them just right. If you want to avoid the wrath of greedy family members, please don’t give the Easter ham to anybody except Cousin What’s-Her-Name. Only she knows what she’s doing. You know what we’re talking about.

Well, that’s their secret to the grave.  You’ll probably never find out, and maybe that’s OK.  If we had the in’s and out’s of everyone’s recipes, they wouldn’t be unique anymore.  Maybe the best part of eating that signature dish is knowing that you’ll never have a clue what’s in it.  The mystery makes each bite so good.

We test drove some cookies, making a couple of interesting decisions along the way.  A little of this, a bit of that.  Making sure to incorporate distinct and noteworthy aspects to each recipe.  We’re still experimenting, but we think we’re onto something.  Don’t hate us for being vague. We just wanted to show you a few of the things we’ve been working on for a special project, but we do have to keep our DD touch secret for now! And we won’t hate it if you do the same.

Claudia’s Test Kitchen

Shrimp & Grits-Duo Dishes

Welcome back to June’s installment of the Guest Test Kitchen!  In case you forgot, or didn’t know, the Duo hails from The University of North Carolina at Chapel Hill (so much pride, we had to say the whole name!).  Last time we were in NC, we went to breakfast right after leaving the airport.  We were thrilled to see all the Southern staples on the menu, especially grits which is actually one of our favorites.  For the whole meal, we lamented over grits missing in our lives out West.  Polenta abounds, but its Southern cousin is either ignored or poorly executed. So just for us, Claudia Hill (another UNC alum and mother to a good friend) cooked a recipe in her kitchen from Charlotte, NC featuring the prized corn mush–grits.  Take it away Claudia!
